Chicken and Rice - Amy
This is super easy to make and takes almost no time to prepare. It does take a while to bake, however, so be prepared! :)
1 1/2 cup rice, uncooked
1 or 2 fryers (or 6 to 8 chicken breasts), cut up
1 can mushroom soup
1 can milk
1 pkg Lipton Onion Soup Mix
1 can water
Line pan with aluminum foil. Spray foil with pam. Pour rice into the bottom of pan. Mix mushroom soup, milk and half the package onion soup. Pour over the rice. Lay chicken pieces in and sprinkle the rest of the onion soup over top. Bake for 2 hours at 350 degrees. Cover with aluminum foil the last hour.
Mini Pizzas - Amy
Sauce:
15 oz tomato puree
1/2 tsp garlic powder
1/2 tsp garlic salt
1 generous tsp oregano
1/2 tsp basil
fresh ground pepper
Crust:
3 1/2 cups flour
1 tsp salt
1 pkg yeast (2 1/4 tsp)
2 TBS olive oil (veg. oil can be used)
1 1/4-1 1/2 cups very warm water
One day ahead, mix all sauce ingredients together and refrigerate during the night, allowing spices to blend. Combine flour, salt, and yeast in a mixing bowl. Add oil and water. Mix well in the bosch. The dough should be soft. Grease a large bowl (Olive oil is best.) Put dough in bowl turning once so that all of dough surface is greased. Let rise covered in a warm place for about 40-60 minutes. Punch down dough after rising time. Heat oven to 450 degrees. Oil your pan. Put dough into pan working from the center to the edge. Can also form mini pizzas. Bake in oven 5-6 minutes. Let cool for a few minutes. Add sauce, cheese and other toppings (mozzarella, pepperoni, onions, green pepper, olives, etc). Bake for another 6-10 minutes.
Taco Casserole - Amy
1 large onion
1 lb hamburger
8 oz tomato sauce
10 oz can enchilada sauce
1/2 tsp salt
4.5 oz can chopped olives
9 tortillas
3 hard boiled eggs, chopped
1/4 lb cheddar cheese, grated
Brown onion and hamburger together. Add tomato sauce, enchilada sauce, salt and olives; mix well. Layer half the tortillas in bottom of a 9X13 pan then half of the meat sauce, 1/2 the chopped eggs, and half the grated cheese. Repeat with one more layer. Bake at 350 degrees for 30 minutes.
Mexican Sandwich - Amy
Super yummy. Takes a little bit of time to make, but worth it. Here you go, Stef!
1 lb. ground beef
1 can kidney beans
2 cans small tomato sauce
1 tsp chili powder
Tortilla chips
Hot, cooked rice
Shredded lettuce
Chopped tomatoes
Grated cheese
Tobasco Sauce
In large frying pan, simmer together first four ingredients to make a meat sauce. Set aside. On each plate, layer ingredients in this order: chips, rice, meat sauce, lettuce, tomatoes, cheese and tobasco.
